When I call this a “recipe”, I am using that word very loosely. This isn’t so much a recipe as it is a “look at this and now make it your own” type of thing. I’m not sure I’ve properly professed my love for tacos on this blog but they are my #2 favorite food in this whole entire world (#1 is sushi!). What I love about tacos is that they can be anything you want them to be. Pick anything at all you’re craving, stuff it into a tortilla and BOOM – you’ve got yourself a taco.
Since I’m trying to find more and more ways to make filling meals without filling them with ridiculous calories, I found a way to make these tacos burst at the seams with tons of flavor at only a fraction of the calories that I would get elsewhere.
My “RECIPE” went something like this:
- In a lightly greased pan, saute shredded cabbage (i promise the taste is mild!), chopped bell peppers, diced tomatoes and a tbsp of minced garlic.
- Once the veggies are nice and tender, crack open 4 eggs and only use the egg whites.
- Mix in until the egg whites are completely cooked. Meanwhile, heat up 2 tortillas!
- Fill your tortillas with your veggie/egg mix and top with a little bit of cheese and lots of salsa. ENJOY!
